CITRUSY WINTER SALAD
Ingredients
1/2 red onion, sliced
4-6 cups arugula & spinach salad mix
2 navel oranges or tangerines, peeled and sliced
2 beets, cooked, cooled and sliced
1/3 cup pine nuts

Creamy Vidalia Onion & Poppy Seed Dressing
Instructions
Slice onion and place in a bowl of ice water to cut the sharpness. Let onion soak as you prepare the remaining ingredients, then drain and dry with paper towels. Place lettuce on a serving platter, top with sliced oranges, onions, beets and pine nuts. Sprinkle with seasoning and drizzle with dressing; toss to coat and serve.
Tip: for this salad, we put The Perfect Blend Seasoning in a grinder for a finer sprinkle of this seasoning.
